Slow Cooker Chocolate Chip Cookies

1 C (2 sticks) unsalted butter, room temperature
2 eggs
1/2 C packed brown sugar
1/2 C granulated sugar
1 tsp vanilla
2 C flour (I used 2 C whole wheat, 1 C white)
1/2 tsp baking soda
1/4 tsp salt
1 C semisweet chocolate chips
1 C coarsely chopped walnuts

Grease slow cooker.  Cut a piece of wax paper to fit the bottom; put the paper on the bottom of the cooker and grease the paper. In bowl, beat butter, eggs, sugars
and vanilla until light and fluffy. In a separate bowl,
mix together the flour, baking soda and salt.Stir dry
ingredients into the butter mixture.  Stir in chocolate
chips and walnuts until well blended. Spoon dough
evenly into slow cooker and smooth the top.  Cover and cook on low about 4 hours, until a toothpick inserted
into center comes out clean.  Set lid slightly ajar for the last 30 minutes of cook time. Turn off heat and remove insert from slow cooker. 

Let cool 30 minutes, then invert onto wire rack. 

Cut in half, then cut each piece into slices.  Serve warm with ice cream. Makes 6-8 servings, is what the recipe says.  Depending on the size of the slice, you can serve
a lot more than 6-8 people.
