Breakfast in a Skillet

Cooking oil
3 or 4 potatoes, peeled and sliced
1 medium onion, peeled and sliced
6 eggs
4 tablespoons milk
1 to 2 cups diced cooked ham
1 cup cheddar cheese,  shredded

In cast ion skillet, fry potatoes and onion in oil until tender.  Beat eggs with milk; add ham; pour over potatoes in skillet.  Sprinkle cheese over top and put skillet in oven and bake until eggs are set.

Note:  You may use cooked sausage or bacon instead of ham and may vary the ingredients to your liking.  May also cook outside over open fire in skillet, but you'll need to cover the skillet.

Scrambled Egg Muffins

12 eggs
1/2 lb. pork sausage
1/2 C. diced onion
1/2 C. diced green pepper
1/2 C. shredded cheese
Garlic Salt

Brown sausage and drain. Beat eggs. Add seasonings to taste and other ingredients.
Fill greased regular sized muffin tins 1/3 full.
Bake 350 degrees for 20-25 minutes.
The recipes says it makes 12 full sized muffins but I got 18 out of my mixture.
Great leftover and heated up in oven. Can be modified to your tastes--maybe pepper jack cheese? Bacon or ham instead of sausage?
Broccoli instead of green pepper? Whatever . . .
