Breakfast in a Skillet

Cooking oil
3 or 4 potatoes, peeled and sliced
1 medium onion, peeled and sliced
6 eggs
4 tablespoons milk
1 to 2 cups diced cooked ham
1 cup cheddar cheese,  shredded

In cast ion skillet, fry potatoes and onion in oil until tender.  Beat eggs with milk; add ham; pour over potatoes in skillet.  Sprinkle cheese over top and put skillet in oven and bake until eggs are set.

Note:  You may use cooked sausage or bacon instead of ham and may vary the ingredients to your liking.  May also cook outside over open fire in skillet, but you'll need to cover the skillet.

Breakfast Muffins

15 -eggs
1# Sausage
1 -onion diced
1 -Bell pepper diced
1-cup pancake batter
Garlic Salt
Shredded Cheese
Cook Sausage, Onion and Bell Pepper & drain
Mix eggs, garlic salt and pancake batter
Spray Muffin pan w/Pam, add a spoon full of
The drained sausage, fill to about ¾ full of the Egg mixture, top w/cheese.
Bake at 350 for 18 to 20 minutes
Makes 24-30 regular size muffins or a lot of the mini muffins. Can freeze & use as needed.

Coconut Bread

4 eggs
2 cups sugar
1 cup oil
1/2 teaspoon salt
3 cups flour
1/2 teaspoon baking powder
2 teaspoons coconut flavoring
1/2 teaspoon baking soda
1 cup buttermilk
2 cups coconut
1 cup chopped nuts

1 cup sugar
2 tablespoons oleo
1/2 cup water
1 teaspoon coconut flavoring (added after cooking)

Beat eggs in a large bowl.Add sugar, oil & flavoring. Blend sift dry ingredients & add alternating with buttermilk. Fold in coconut & nuts. Bake in greased & floured pans 325 for one hour (40 minutes for smaller pans).

Mix together & cook in sauce pan for 5 minutes. Remove from stove & add flavoring. Pour over bread as soon as it is removed from oven. Let stand 45 minutes then remove from pan & wrap while warm. May refridge or freeze.

Easy Breakfast Bake

8 frozen hash brown patties
4 cups shredded Cheddar cheese
1 lb. cooked sausage or ham
8 eggs
1 cup milk
1/2 teas. salt
1/2 tsp. ground mustard (optional)
Place hash browns in a single layer in a greased 9 X 13 pan.Sprinkle with cheese and sausage or ham. Beat eggs, milk, salt and mustard. Pour over cheese and meat. Cover and bake for 350 degrees for 1 hr. Uncover and bake 15 minutes longer or until edges are golden brown. I prepare this the night before then bake next morning....I also add a few more eggs and a little more milk, if I want a bigger casserole.

Peachy Bread

1 1/2 cup flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup sugar
2 eggs
1/4 quarter cup vegetable oil
1/4 cup apple sauce
1 1/4 cup chopped ripe peaches
2 teaspoons vanilla extract
1/4 cup chopped toasted almonds or walnuts (optional)

1 cup sifted powdered sugar
1/4 teaspoon vanilla extract
2 tablespoons fresh orange juice

Preheat oven to 350 degrees. Mix flour, salt, baking soda & sugar in a large bowl. Make a well in the center & add eggs & vegetable oil. Stir until just moistened. Mix the peaches & extract then add other ingredients. Stir until all ingredients are moistened. Do not over mix. Stir in nuts. Pour into greased & floured 9x5x3 inch loaf pan & bake for one hour.

While the bread is baking, mix the glaze ingredients. Cool the bread for 5 minutes, remove bread from pan. While bread is still hot, with a fork poke holes into the bread & pour glaze over the bread.

Scrambled Egg Muffins

12 eggs
1/2 lb. pork sausage
1/2 C. diced onion
1/2 C. diced green pepper
1/2 C. shredded cheese
Garlic Salt

Brown sausage and drain. Beat eggs. Add seasonings to taste and other ingredients.
Fill greased regular sized muffin tins 1/3 full.
Bake 350 degrees for 20-25 minutes.
The recipes says it makes 12 full sized muffins but I got 18 out of my mixture.
Great leftover and heated up in oven. Can be modified to your tastes--maybe pepper jack cheese? Bacon or ham instead of sausage?
Broccoli instead of green pepper? Whatever . . .
